Why Is Wheat Bad For Me?

One thing that I have been asked several times since going gluten-free is “why is grain all of the sudden bad for us when we have been told in scripture that it is good for us.”  What I have found through my research is this, the wheat our ancestors grew and ate is not the grain we now call wheat.  Wheat has been genetically altered to the point of being unrecognizable as the wheat from even the days of our grandmothers.  The wheat of today has a much higher gluten content, a super starch called amylopectin A and instead of the old 14 chromosomes that nourished people for thousands of years our wheat has 28 chromosomes. Bigger, better right?  I must say false.  Because of all the modern modifications wheat is now the kiss of death, not the bread of life!  It now affects our immune systems, brain function and nervous system in highly negative ways.

So many people walk this earth every day with chronic pain, mysterious ailments, recurrent sickness and annoying skin irritations, having no idea that it can all be linked in some way to the gluten they consume on a daily – and sometimes hourly – basis. If you want to learn more, and I am positive you do, click here.  Many people accept brain fog, lack of energy, weight gain, mood swings and other “non-life threatening” ailments as part of life or growing older.  I personally refuse to close my eyes and say “all is well” just because I don’t want to give up eating my favorite foods.  And believe me, I LOVE all that wheat can be made into. But, nothing can taste as good as being healthy feels!  Right?
