Cauliflower Rice
One of the recipes I tried the other night from Make It Paleo was “Cauliflower Rice”. Ok, you may think that sounds awful but I am hear to tell you… it was great! No one at the table even questioned what it was until my daughter revealed that it wasn’t rice. It was wonderful and I am not just saying that. Here’s the recipe: Cauliflower Rice 1/2 head of cauliflower 1 tbs coconut oil 1/2 yellow onion 1 clove of garlic, minced salt and pepper to taste Rinse the cauliflower and separate into large chunks.
