Mucho Gracias

I want to say thank you to everyone who has wished me well.  This is a very big deal for me and I will need all the taste testers who dare to test my food.  I woke up this morning and still want to do this more than ever so I think it is the right move for now.

Just a few of the particulars: School will be 4 hours a day either 8-12 or 1-5pm Monday thru Friday. Our studies will include food from France, Italy, China, Turkey, Thailand and Greece.  With many other countries in-between.  There will also be much dessert!  That will be what I mainly want to focus on but in order to get the restaurant management experience I needed to open my own place I needed to learn it all!  That’s not a bad thing.

Here are just a few of the courses I will be taking: Intro to Baking Science and Theory, Food Styling and Photography, Food Financial Mgmt, Catering, Asian Cuisine, Pastry Tech and Dessert Artistry, Classical Cuisine and many many more.  Does that just sound awesomely fun???  Plus I get my own “Knife Kit”.  I just might carry it with me wherever I go :) (do you think I will need a concealed weapons license?)

As for taking this to Food Network.  Well, not really what I am aspiring to do but if they came knocking on my door I wouldn’t slam it on their toes.

Yes Paul, I will change the Title of my site! I have to think of something a little more creative though. Stay tuned.

While the kids are in school

For years I have looked forward to the day when Madison went to school all day.  The time is almost here and I began contemplating what I would do with my time.  It isn’t hard to think of all the fun things I could do but many of them involve spending lots money and eating good food.  Although I haven’t ruled those things completely out, I have decided to take another approach to spending lots of money and making good food!

When they say your life can change in a minute….they mean it. Yesterday I requested information from the Art Institute of Utah about their culinary programs.  I wanted to look over everything so that some day in the future I could “think” about enrolling.  Well, today I am a full fledged student.  They tried to get me to start this Monday but of course with 4 kids on summer vacation, that was out of the question.  Soooo, I start my next phase in life on October 6, 2008.

Within 2 ½ years I will have my Bachelor of Science in Culinary Management - how awesome is that?!

With every enrollment there is a tour of the culinary school.  I wanted John to be as excited as I was so I asked him if he wanted to join me.  Eagerly he decided to “work from home” so the two of us could tour “my” Disneyland.  It was the most wonderful place with all its stove tops, knives (by the way I get my very own knife kit just like they have in Top Chef) mixers and pantry.  Completely AWESOME pantry!  They even have a restaurant that will open in October (just like “Hell’s Kitchen”) with five course meals for $8-$10 and we will all get to operate and participate in at some point in our schooling.  My excitement couldn’t be greater at the thought of learning to cook, bake and manage a restaurant.  John can’t wait for dinner!

Many of my future blogs will probably be about my experiences and trials at school but I hope you will all enjoy reading about it as I enjoy doing it.

Anyway, I just want you all to know about the exciting journey I am about to go on. My stomach has butterflies and my emotions are on my sleeve while I think of finally having the opportunity to do something I have thought about, talked about and dreamed about for years.  The kids are already complaining about me not being here as much as I am now.  Little do they know the rewards of me learning to “really” cook!!
